Getting disconnected when using the apex/t2 on the 360. Both set to 500hz polling.

Apex doesn't support more than 125Hz on last-gen consoless. Disconnects though likely have more to do with a faulty USB cable or insufficient power.

if T2 polls at 1000Hz and is the one connected to the last-gen console will this setup work
mouse report at 1000Hz ==> xim apex poll at 1000Hz then report to T2 at 1000Hz ==>T2 poll from xim at 1000Hz than report to console at 1000Hz ==> last-gen console poll from T2 at 1000Hz .

yes, this works. Just remember to configure the Titan Two output polling rate to 1000HZ.
